Chipotle Mayonnaise

This is the perfect dip to spice up your appetizer platter or boost the flavours of your favorite proteins. Increase or decrease the spice to your liking, and store in the fridge for a delicious week ahead!

- ¼ cup unsweetened soy milk or whole milk
- 2 teaspoons tomato paste
- 2 teaspoons fresh lime juice
- ¼ teaspoon apple cider vinegar (or substitute white wine or distilled white wine vinegar for a milder taste)
- ¼ cup neutral-tasting oil, such as high-oleic safflower or avocado oil
- ⅓ cup extra-virgin olive oil
- 1 small clove
- ¼ tsp chipotle powder
- ½ tsp salt
Place all the ingredients in a wide-mouthed glass mason jar or cup that will fit an immersion blender without splashing. Blend with the immersion blender until creamy.
Adjust the seasoning to taste. Place a lid on the jar. Allow the flavors to develop for 1 hour or more in the refrigerator. The mayonnaise will keep for 1 to 2 weeks in the refrigerator.
