- 1 tbsp olive oil
- 16 ounces Beef steak, top sirloin (4 pieces, each about 4 ounces)
- 8 slices turkey bacon
- 1 tbsp olive oil
- 1 cup dried mango
- 1 cup green beans, sliced
- 1 cup mushrooms, sliced
- 1 cup bell pepper, chopped
- Fresh herbs of choice, salt, and pepper, to taste
Preheat oven to 425°F.
Wrap each 4 ounce steak in 2 slices turkey bacon.
Heat 1 tbsp olive oil in a fry pan over high heat. Sear steak on each side until browned - about 2 minutes per side.
Meanwhile, toss together 1 tbsp olive oil, dried mango, green beans, mushrooms, bell pepper, fresh herbs, salt, and pepper (about 1 tsp salt and 1/4 tsp of pepper is recommended). Spread on a sheet pan in a single layer.
When the steak is done searing, lay them over the dried fruit and vegetable mix. Season the steak with a bit more salt and pepper.
Cook in the oven until desired doneness for the steak - about 8 minutes for medium-rare.
