Apple Liver Pâté

Chef Kenzie's apple liver pâté is a delicious budget-friendly snack or meal to add to your weekly rotation!

Ingredients
  

  • 2 tbsp olive oil
  • 1 medium onion, roughly chopped
  • 2 tsp dried oregano
  • 1 medium apple, roughly chopped (skin ON)
  • 1 lb beef liver
  • 1 cup cooked or canned white beans
  • 1 tsp salt (or more, to taste)
  • 1 tsp lemon juice (or more, to taste)
  • Optional: sesame seeds and fresh herbs for garnish

Instructions
 

  • Heat 2 tbsp of olive oil in a large pan over medium heat.
  • Add chopped onion and minced garlic. Sauté until onions are translucent and garlic is fragrant (about 2-3 minutes).
  • Add oregano and chopped apples. Sauté until apples begin to soften (about 5 minutes).
  • Add a few tablespoons of water to deglaze. Then, increase heat to high and add liver. Cook on one side for 3 minutes, until browned.
  • Flip the liver, reduce heat to medium, cover and cook for 5 minutes.
  • Remove cover. Add white beans, then cover again and cook for an additional 5 minutes, until liver is cooked through.
  • Remove from heat and blend. Add lemon juice and salt, to taste. Garnish with optional sesame seeds and fresh herbs.
