Heat 2 tbsp of olive oil in a large pan over medium heat.
Add chopped onion and minced garlic. Sauté until onions are translucent and garlic is fragrant (about 2-3 minutes).
Add oregano and chopped apples. Sauté until apples begin to soften (about 5 minutes).
Add a few tablespoons of water to deglaze. Then, increase heat to high and add liver. Cook on one side for 3 minutes, until browned.
Flip the liver, reduce heat to medium, cover and cook for 5 minutes.
Remove cover. Add white beans, then cover again and cook for an additional 5 minutes, until liver is cooked through.
Remove from heat and blend. Add lemon juice and salt, to taste. Garnish with optional sesame seeds and fresh herbs.
