To Assemble...
Grease a 9x9 cake pan. Start by laying half of your turkey bacon (about 6-7 slices) on the bottom of your pan - being sure to cover as much of the bottom as possible.
Layer One: Spread half of the sausage and vegetable mix over the bacon.
Layer Two: Spread the entire cauliflower mash mix over the sausage and vegetable mix.
Layer Three: Spread the remaining sausage and vegetable mix over the cauliflower mash.
Top with the remaining turkey bacon (about 6-7 slices) - being sure to cover as much of the top as possible.
Bake at 425°F for 15 minutes. Then, reduce heat to 350°F and cook for an additional 45 minutes, or until the meat is cooked through. NOTE: You may need to remove the bacon on the top during cooking if it is getting too browned. Simply remove, then place back on top of the meatloaf when it is cooked.
