We’ve been posting lots of dairy-free and vegetarian meals recently – so today, we thought we’d do a meat-lovers dish to switch things up. This layered meatloaf is a meat-lovers dream, with a cauliflower and white bean filling to add a bit of volume and some tasty slow carbs.

Chef Kenzie’s Cauli-Stuffed Layered Meatloaf!

Chef Kenzie grew up with two classic Sunday night family dinners: Meatloaf and Shepherd’s Pie. Both dishes are comforting, rich, fatty, and absolutely delicious. Since her childhood, she’s been re-imagining these comfort food classics. Culinary school and now cooking-for-one has inspired her to put her own unique twist on them. Discovering new flavors and making the recipes easy and accessible has led to some new favorites.

If you have a food processor or immersion blender on hand, prep is a breeze. This bacon and sausage meatloaf has a few more steps than a typical meatloaf. However, this recipe is perfect to be prepared in batches and frozen for meals later in the week (or next).

Finally, this recipe isn’t just for dinnertime. The addition of bacon and sausage makes it a delicious addition to your morning scrambled eggs or a lunch-time Grain-Free Waffle sandwich.

Ingredients
  

For the Meat Mixture...

  • ½ cup carrots, roughly chopped
  • ½ cup onion, roughly chopped
  • ½ cup parsley, roughly chopped
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp dried oregano
  • ½ tsp onion salt (or regular salt)
  • 1 tsp Worchestershire sauce
  • 1 tbsp apple cider vinegar
  • 4 sausage links, chicken or turkey
  • 1 cup ground meat of choice (we used 85% lean ground beef)

For the Cauliflower Mash...

  • 2 cups cauliflower, roughly chopped
  • 1 cup white beans, cooked
  • 1 cup ground meat of choice (we used 85% lean ground beef)
  • 1 tsp Worchestershire sauce
  • 1 tbsp apple cider vinegar

For Assembly...

  • 12-14 slices turkey bacon

Instructions
 

  • Preheat oven to 425°F.

For the Meat Mixture...

  • Place the carrots, onion, and parsley in a food processor or in a large container that will fit an immersion blender. Blend into a purée.
  • Add cumin, chili powder, oregano, salt, Worchestershire sauce, and apple cider vinegar. Mix until combined.
  • Remove the casing from the sausages. Add the meat of the sausage to the seasoned vegetable purée.
  • Add 1 cup of ground meat to the sausage and puréed vegetables. Mix until evenly distributed.

For the Cauliflower Mash...

  • Place the cauliflower, white beans, ground meat, Worchestershire sauce, and apple cider vinegar in a food processor or in a large container that will fit an immersion blender. Blend until smooth.

To Assemble...

  • Grease a 9x9 cake pan. Start by laying half of your turkey bacon (about 6-7 slices) on the bottom of your pan - being sure to cover as much of the bottom as possible.
  • Layer One: Spread half of the sausage and vegetable mix over the bacon.
  • Layer Two: Spread the entire cauliflower mash mix over the sausage and vegetable mix.
  • Layer Three: Spread the remaining sausage and vegetable mix over the cauliflower mash.
  • Top with the remaining turkey bacon (about 6-7 slices) - being sure to cover as much of the top as possible.
  • Bake at 425°F for 15 minutes. Then, reduce heat to 350°F and cook for an additional 45 minutes, or until the meat is cooked through.
    NOTE: You may need to remove the bacon on the top during cooking if it is getting too browned. Simply remove, then place back on top of the meatloaf when it is cooked.
