Some days, we just don’t have the time to prepare a fancy multi-component meal for the family. This can lead us to reach for highly processed “convenience” foods to feed our family and attempt to curb hunger. Unfortunately, these processed “convenience” foods often lack the nutrients we need to thrive. The good news? There are PLENTY of quick and easy recipe solutions that can be prepared in a flash. One-pan meals are our favorite quick-and-easy dinner solutions. Chef Kenzie’s Mustard Sheet Pan Chicken dinner is yet another quick-and-easy one pan meal that we absolutely love!

Quick and Easy Sheet Pan Dinner – Make it Your Own

The beauty of sheet pan dinners is that they only take about 5 minutes to whip together, and require just one dish to clean at the end (minimal clean up necessary!). You can be creative by using your favorite spice mixes, a variety of vegetables, and even a different protein like beef, or lamb or even tofu. Simply toss everything together, let the flavors cook in the oven, and spend time doing the activities you LOVE.

Chef Kenzie's Sheet Pan Mustard Chicken Thighs

A quick-and-easy chicken recipe the whole family will LOVE.

Cook Time 20 minutes

Ingredients
  

  • 2 cups diced asparagus (or green vegetable of choice)
  • 2 cups cherry tomatoes
  • 3 cups white beans (canned, drained, rinsed)
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • 1.5 pounds Chicken thighs, skin on
  • 2 tablespoons olive oil
  • 4 teaspoons dijon mustard
  • ½ teaspoon salt
  • ¼ teaspoon pepper

Instructions
 

  • Preheat oven to 425°F.
  • Toss together asparagus, cherry tomatoes, white beans, olive oil, and salt. Lay in a single layer on a sheet pan or roasting tray.
  • Top vegetables with chicken thighs.
  • Using a fork, whisk together olive oil, mustard, salt, and pepper. Drizzle over the chicken thighs.
  • Roast for 20 minutes, or until chicken reaches an internal temperature of at least 165°F.
