(Mini Story): In my family (Chef Kenzie speaking here…), my father and grandfather were incredible home cooks. My grandfather would serve us over the top family-style meals on alternating Sunday nights (complete with appetizers, entrees and desserts) while my dad would shine through with his famous Shepherd’s pie or smothered meatloaf on the other Sunday nights. These meals were always a special occasion. They were a time to spend with family, share laughs, catch up on life events, and indulge in some delicious (and nourishing) home-cooked food. It showed me just how special sharing a meal can be – and just how important it is to continue to cook, share, and truly enjoy each meal.

Cheese-Stuffed Grain Free Waffle “Donuts”

Who doesn’t love a classic cheese-and-bread combo? This creation transforms our crowd-favorite Grain Free Waffles into a fun cheesy snack by simply baking the batter and adding cheese! Furthermore, by slicing the donut in half, you can have the base for a tasty cheesy breakfast sandwich! Pro Tip: If you don’t have a donut mold, you can prepare this same recipe in a regular sized muffin tin (we prefer silicone muffin tins for a non-stick pan). Click HERE for the recipe.

BBQ Meat Skewers with Peanut Sauce

We LOVE our Thai Peanut Sauce from the Always Hungry? book (page 262). Often, this sauce is paired with stir-fries or leftover salads. Although those options are delicious, this sauce also lends itself to pairing as a dipping sauce with a variety of grilled meats. We recommend trying this sauce with your favorite chicken, vegetable, or pork skewers. The leaner meats allow this flavourful and rich sauce to shine through – without competing against strong flavors from a gamey meat.

Sweet Breakfast “Poutine”

Are you a fan of our Grain-Free Waffle recipe? If so, this recipe is a great adaptation to add a bit of “pizzaz” and a sweet treat to your morning. Chop the cooked Grain-Free Waffle into 1-inch squares (follow the design of the waffle to chop into squares). Place the chopped pieces on a large plate. Top with a generous drizzle of warmed peanut butter and dark chocolate. Garnish with fresh berries and a dollop of whipped cream. For protein, add a large dollop of Greek yogurt OR serve with 2-3 pcs of turkey bacon. 

Parmesan Topped Sweet Potato Fries

Sweet potato fries are a tasty way to enjoy a “fry-like” meal without opting for the classic white potato fries. We add a contrasting flavor (in this case, salty) to balance the sweetness. Prepare sweet potato fries as you normally would. We like to toss them in a bit of oil and salt and air fry them until crispy. Then, top the warm fries with parmesan cheese. You can also drizzle or dip the fries in garlic olive oil OR garlic butter. Serve as an appetizer or a side dish for your meal! Pro Tip: If your father likes things a bit spicy, try adding chopped jalapeno peppers along with the parmesan cheese and garlic oil! Alternatively, swap the garlic oil with a bit of chile oil.
