Quick and Easy Fennel Salad

Fennel Salad or Quick Slaw

This fennel salad is one of my favorite quick-and-easy recipes. It takes less than 5 minutes to prepare, and is the perfect refreshing side dish to any main course. Better yet? No need to chop vegetables or introduce any complex techniques – simply shred, toss, serve, and enjoy. Alternatively, buy pre-shredded vegetables like cabbage or broccoli slaw.

Fennel Salad Variations

Not fond of fennel? Try using shredded cabbage, carrots, broccoli stalks or any hard vegetables to make a fantastic slaw. You can even buy pre-shredded vegetables or use a vegetable peeler to shred into thin layers. Rub the salt into the vegetables and omit the lemon. Then, replace the lemon by tossing the slaw with one of our 5-minute sauces. If you add a juicy vegetable like cucumbers, add them at the end when you toss in the dressing.

Looking for an elegant side dish you can prepare in-a-flash? This fennel salad is the perfect quick-and-easy refreshing side dish to pair with your favorite main course meal.

Ingredients
  

  • 1 fennel bulb
  • tsp salt
  • 1 lemon, juiced

Instructions
 

  • Shred one bulb of fennel into thin layers using a mandolin or large grater. (TIP: If you don't have a large grater, use a peeler to "peel" the fennel into thin strips)
  • Add salt and the juice of one lemon.
  • Massage the salt into the fennel until it gets soft and wilted.
  • Serve alongside your favorite main course meal.
